Caramelized bacon


Ingredients for 4/5 people:

1kg fresh bacon

1l vegetable broth

2 honey tablespoons

2 soy sauce tablespoons

2 Modena vinegar tablespoons

2 tomato sauce tablespoons

A pinch of red spicy pepper

1 salt teaspoon

Boil the broth in a cooking pot, add the bacon and let it cook for about an hour. Once it’s cooked, let it cool. Remove the bacon and cut in 3/4cm pieces.

Mix the other ingredients in a bowl and sink the bacon pieces in it. Let it marinate for two hours.

Heat a pan or a griddle. Remove the bacon pieces from the sauce, drain it and cook it until it’s caramelized from both sides. Serve while it’s still hot.

You can add potato puree, steamed vegetables or salad as a side dish. It could be a good idea to use the remaining sauce and broth as a decoration, pouring some of it on the top of the bacon.
